Balsamic_chicken_ w_veg(Large)1. Marinate chicken breast for 15 minutes in balsamic vinegar, garlic & cracked pepper

2. Spray the BBQ or grill pan with cooking oil spray and chargrill the chicken until cooked through

3. Cook veggies for approx 1 min each side (thick, flat slices of zucchini, capsicum, eggplant, red onion, cherry tomatoes work well). Also caramelise half a lime - tastes great squeezed over everything at the end!
